Ingredients (serves 4):

200g mangetout
2 head pak choi finely sliced
2 red onion finely sliced
2 carrots grated
100 ml sweet chili sauce
50 ml soy sauce
25ml Toasted sesame oil
1 inch ginger grated
2 cloves garlic crushed
4 nests of noodles

Thai vegetarian stir fry


Method

First of all make sauce by combining the sweet chili sauce, soy sauce, sesame oil, ginger and garlic.

Mix these ingredients together in a bowl and mix well. Set aside.

Heat wok until it is smoking then add the mangetout, sliced onion, sliced pak choi and grated carrot, stir fry for two mins.

Drop noodles into boiling lightly salted water. Cook according to packet instructions.

Add sauce to vegetables and cook for another minute.

Drain noodles

To serve

Serve stir fry veg on a bed of noodles
