Ingredients (serves 2):

2-3 eggs per portion
10g butter
1 tomato finally -diced
1 shallot finally -diced
½ red pepper- diced
Seasoning

Spanish omelette


Method

Beat eggs and season.

Heat a deep frying pan.

Fry off tomato, onion and pepper in a little oil.

Add butter until foaming but not burned.

Add eggs and and cook quickly moving continuously with a fork until set.

Carefully slide omelette from pan and serve.
