Ingredients (serves 4):

Dressing
100ml pomegranate juice
2 tablespoons walnut oil or extra virgin olive oil
1 garlic clove, finely minced
1/2 tablespoon brown sugar, packed

Salad
60g soft fresh goat cheese
fresh ground pepper
100g toasted walnuts -finely chopped
Large bunch of baby spinach or other lettuce
1 pomegranate -seeded
fresh basil (optional)

Pomegranate Persimmon Salad with Warm Goat Cheese


Method

Whisk together dressing ingredients. It will probably make more dressing than you need.

After salad ingredients are prepped, preheat oven to 180°C.

Form goat cheese balls, top with freshly ground pepper, and roll in walnuts to coat

Place on a baking sheet.

Assemble salad with greens, pomegranate seeds, and basil.

Just before serving, warm the goat cheese in the oven for about 3 minutes.

Toss salad with dressing.

 

To serve

Plate, carefully top with warm goat cheese, and enjoy!
