Ingredients (serves 4):

1 onion finely chopped
1 table spoon oil
2 tsp curry powder
2 tbsp plain flour
300ml fish stock
2 tbsp concentrated tomato puree
1 tbsp mango chutney
Juice of ½ small lemon
150ml double cream
450g peeled cooked prawns
Fresh coriander leaves to garnish

Method

Put the onion and the oil in a medium bowl and cook on full power for 5 minutes.

Remove, add the curry powder, flour, stock, tomato puree, chutney and lemon juice.

Cover and cook on full power for 4 minutes.

Remove and stir in cream and prawns. Cook for 1 minute.

Serve hot garnished with coriander.
