6 leeks –finely sliced
Garlic cloves –finely sliced
50ml white wine
300g butter beans
Parsley-few sprigs
Thyme- few sprigs
1-2 tblspCrème fraiche
4 x 200g fillet steaks
Lemon to taste
Olive oil to fry
Finely sliced leeks and sweat with garlic, thyme and small amount of olive oil until soft and sweet.
Turn up heat add the wine bring to boil.
Add beans and enough water to cover.
Add butter to enrich and crème fraiche.
Pan fry steak to order.
Arrange creamy leek mixture on plate carve steak and place on top of the bed of leeks and butter beans.
