Ingredients (serves 4):

1 kilo of ripped tomatoes
1 green pepper
1 garlic cloves
1 cucumber
2 dl de extra virgin olive oil
4 tbsp of red wine vinegar
1 slice of white bread
Salt

Gazpacho


Method

To peel the tomatoes score an X in the skin of tomatoes and place into boiling water for 10 seconds, remove from the water and place under cold running water.

The peel should now just slip off; if it does not pop back in the boiling water for a few more seconds.

Chop roughly the tomatoes, green pepper and a peeled cucumber.

Soak the white bread in water.

Put the gazpacho through a sieve.

Leave it cool down in a fridge for 1 hour.

Serve the gazpacho in soup bowls, with the portions of diced tomatoes, pepper, cucumber, croutons, sprinkle diced serrano ham or hard boiled egg, etc. on the table, so that everyone can add them to their bowl as they prefer.

Gazpacho is a Summer dish which is meant to hydrate and cool down your body. So the colder the better!!
