Ingredients (serves 4):

500g chopped Carrots
100g red lentils –rinsed
onion -chopped
1 stick of celery -chopped
1 vegetable stock cube
10ml milk

Carrot & Lentil Soup


Method

Fry onion, carrot & celery for 6-8 mins.

Add Lentils, stock cube and 750ml of hot water.

Bring to the boil then simmer for 15 mins.

Cool soup and blend/mash with potato masher.

Add 100ml hot water bring back to the boil.

Season & finish with milk.
