100g Nigerian brown hybrid beans
1 onion -chopped
Chilli powder or paprika
Olive oil
1 clove garlic
Salt
1 red pepper -chopped
1 yellow pepper -chopped
1 green pepper -chopped
Vegetable stock
½ tbsp tomato puree
Wash the beans.
Pour into a saucepan and add water or vegetable stock.
Bring to boil, check and add water as needed.
Add the chopped onions.
Cook the beans until tender.
Add the remaining ingredients and allow simmering-reducing heat.
Cover and let it cook for another 5 minutes, stirring occasionally.
Serve hot with a side of fried plantain.
Ripe plantains (diced)
Vegetable oil for frying (fryer).
Salt, to taste.
Heat oil in a fryer.
Place the diced ripe plantain in the fryer, fry until golden brown.
Drain on paper towels.
Serve hot or warm.
